How to Prepare Water Kefir

Step 1: Using a large glass, ceramic or plastic container (with a lid), mix the full contents of one sachet of Water Kefir cultures into one liter of water (filtered). Add in sugar* and the fruit of your choice to taste (lemon works well). Leave the mixture, properly sealed, to sit at room temperature for 48 hours (activation period). Make sure that you don't fill the jar full to the brim to avoid the build up of pressure.
Step 2: After 48 hours have passed remove the fruit (if you have used lemon, for example, squeeze the juice into your kefir mixture). Reserve 200ml of the water Kefir mixture for your next batch of Kefir. The remaining 800ml preparation is ready for you to drink and enjoy, keep this sealed and stored in the fridge.
Step 3: To make your next batch of water Kefir mix the 200ml reserved water Kefir with more water, sugar, and fruit. Use up to one liter of water and leave the mixture to sit at room temperature for 24 to 48 hours.
Repeat step 2 and step 3 to make more water Kefir. You can do this for up to 15 to 20 batches, after that you will need to start a new sachet, this is to prevent bacteria developing.
*The sugar you use is to your taste, you will get to know your Kefir and how you like it and you can then tailor the amount of sugar you use.
