How to Prepare Milk Kefir

Step 1: Using a large glass, ceramic or plastic container (with a lid), mix the full contents of one sachet of Kefir starter cultures into one liter of milk (preferably unrefrigerated and at room temperature). Stir well and leave the mixture at room temperature for a full 48 hours.
Step 2: When the 48 hours are up, take out 3 tablespoons from the prepared Kefir mixture and set aside in another container. The Kefir remaining is ready for you to drink (store this prepared Kefir in the refrigerator until you are ready to drink it).
Step 3: To prepare the next batch of Kefir you will use the 3 tablespoons of Kefir that you removed from the container in step 2. Using the container you mix the 3 tablespoons of Kefir and as much milk as you would like (maximum one liter) and leave it at room temperature for 24 hours (make sure it is stirred well).
For further batches, you will need only 24 hours for the Kefir to be prepared. For each fresh batch of Kefir, you remove 3 tablespoons and repeat the process as per step 3. You will notice after about 4 to 5 weeks that the Kefir will start to get thin and watery, this means it's time to get start a new pack of Kefir starter cultures and begin the cycle again. It is important to note that prepared Kefir should be kept in the refrigerator and consumed within 48 hours.
